Oct. 25--The folks at Cook's Illustrated magazine and the "America's Test Kitchen" TV show are known for wonderful, impeccably tested recipes. But they're also known for creating dishes that are a tad fussy, with lots of steps, lots of ingredients and plenty of pots and pans. The latest entry in the cookbook series aims to change that, though, by offering up some 300 dishes -- skillet meals, quick stews, pan-seared meats -- that can be whipped up on a busy weeknight.
