Knowledge of life-threatening food allergies and preparation for allergic reactions will enable school personnel to effectively respond to a student having a severe allergic reaction. While the mortality rate for food allergy reactions is low and most students do not experience life-threatening reactions, there can be disastrous exceptions. Currently, it is estimated that 1-2% of the general population is at risk of experiencing anaphylactic reactions caused by food allergies and insect stings, with a smaller percentage having anaphylactic reactions due to latex and medication allergies.
