I FIRST TASTED this soup at the Stein Eriksen Lodge, a fabulous ski resort in Deer Valley, Utah. I told the chef how much I liked it and asked him for the recipe. He laughed and told me it was so simple that I didn't need a recipe, then told me how to make it. I couldn't believe a dish so delicious and complex tasting could have so few ingredients and be so easy to make.
As soon as I retuned home I made the soup for dinner, and it was exactly as I remembered it. I now make this soup frequently for dinner parties, and all of my guests rave about it. When white asparagus is not available, you can substitute green. The ...
