From spiced-up entrees to burgers and crispies, the one-time luxury fish is likely to be surfacing in more proletarian surroundings these days. Fish power to the people!
With salmon now a bargain worldwide (prices for sockeye recently hit a 13-year low in Japan), more foodservice operators have expressed interest in menuing the fish in untraditional formats. Indeed, a McDonald's franchise in Kodiak, Alaska, in November began test marketing salmon burgers made from locally-caught pinks. Meanwhile, food technologists in Alaska are working hard to develop salmon fillet blocks for industrial use.
