Dec. 11--Alan Chen plans to open Yoko's Sushi and Teriyaki restaurant in mid-January in the Jackson Plaza shopping center. The Japanese-cuisine restaurant will be at 1017 East Ave. S., the former location of Paradise Point Pottery Joint.
The menu will include a variety of sushi dishes, and a variety of teriyaki dishes -- such as teriyaki chicken, beef and shrimp. Sushi is cold cooked rice flavored with vinegar and topped with fish, shrimp, egg or vegetables. Customers can choose between cooked and uncooked fish.
