Listeria monocytogenes is the terror of every producer of meat, poultry, salads and dairy products. The bacterion is highly resistant against salt, nitrite, drought and acidity, and on top of that it is able to reproduce at low temperatures. EBI Food Safety combats listeria, and in the future also other pathogens, with bacteriophages. How can these 'bacterion eaters' be used in the production process?
