Dec. 19--The edict handed down this month by the New York City Board of Health banning the use of trans fats in all of the city's restaurants has sent shock waves rippling throughout the country. The fear of the restaurant world is that as New York City goes, so goes the country.
But even without an immediate threat of government mandate, chefs and restaurateurs, especially those associated with fast-food and corporate chains, are scurrying to change cooking methods and retool recipes so they can declare their establishments free of this latest culinary whipping boy.
