DEAR CHEFS' SECRETS: I recently went to a 50th anniversary party at Chaucer's in Clifton Park. The meal was delicious. The main course was boneless breast of chicken, no dressing, but it had some kind of a seasoning instead of the dressing - a little hot pepper and whatever.... The chicken was coated with extra-fine crumbs, delicious, juicy, not dry like you get sometimes. Oven-browned potatoes... nice and moist; family-style greens flavored with some kind of a meat and red pepper. Everything was piping hot. I would like the recipes for the chicken and greens.
