Process American cheese is one step removed from natural cheese. Its look-alikes are two steps or more removed. Here's a rundown on the kinds of process slices in the supermarkets:
Cheese food. This is the product most often used in place of regular process American cheese. Government standards require that it contain at least 51 percent cheese, but it often contains more - an estimated 65 percent. Taking up the slack: water, milk, skim milk, buttermilk, powdered milk and whey (the liquid that remains after the milk solids coagulate), among other ingredients. The typical price is $2.77 a pound.
