A Kent, Wash., company is turning a dairy industry waste product, whey, into a milk substitute its inventor says contains little fat, no cholesterol and lots of nutrition.

Balance Foods began marketing Milk-Lite this month in 20 Puget Sound Safeway stores and 27 other regional groceries.

Sam Huffman, Balance's president, said the company hopes to expand marketing by 20 stores a month.

Known to most people as half the diet of Little Miss Muffet of nursery rhyme fame, whey is the watery part of milk. The other part, curds, is used to make cheese.
