Dec. 27--Champagne is called bubbly for a good reason, one that goes way beyond its carbonation.
According to Michel Thibault, local expert and manager with Chan's Wine World, "Champagne is synonymous with happiness and pleasure. When you open a bottle at a table in a restaurant, people all around you know that a celebration is happening."
Thibault has a life-long affinity with the sparkling wine that is especially associated with New Year's celebrations: He grew up in the Champagne region of France that gave the sparkling beverage its name.
