At our house, potatoes came last. They were that important.

In the winter, they were usually baked potatoes, which my father, meticulous man that he was, required a fresh plate for and which he taught us how to carefully cut into long quarters, then butter and mash with our forks. In the summer, they were usually boiled potatoes, eaten as a main course, from a bowl, with butter and sour cream, which we'd crush in as we ate them, but not quite mash, using an entirely different fork technique.

For a treat or special occasion, they were always mashed potatoes, sometimes with chopped spinach or mashed ...
