A healthful menu reaps bountiful sales.
Fresh Choice has taken root not only in Northern California and Seattle, cradle of the healthful and fresh movements, but also in Dallas, heart of cafeteria country. Now the buffet chain is poised to seed other areas of the country.
This is notable because the market has not been overly kind to similar concepts. Several "healthful foods" concepts, including Soup Exchange, Souplantation, Good Earth and the ill-fated D'Lites and Fresher Cooker have offered menus similar to Fresh Choice's but with lesser degrees of success.
