There are some things you should know about soy milk: In many recipes, you can substitute soy milk for dairy milk and no one will suspect, not even a finicky spouse.

Numerous research studies have shown that adequate amounts of soy compounds can help lower blood cholesterol, and the U.S. Food and Drug Administration is considering whether to allow product labels to make that claim. Research also indicates that soy might help prevent some kinds of cancer, reduce menopausal hot flashes and prevent the bone-weakening disease osteoporosis by keeping bones strong.
