German red cabbage is a sweet, tart, tasty way to enjoy the marvelous red brother of the cabbage trio, which includes savoy and regular Dutch cabbage. All too often, red cabbage is relegated to a garnish or a secondary role in coleslaw.

But when red cabbage is cooked, it takes on a whole new character. It becomes sweeter and the crimson juices it exudes are full of flavor.
