Dried mushrooms look like something only a mother could love. All wrinkled and shriveled up. But oh, it's what's inside that counts. And inside most dried mushrooms you'll find a delicate woodsy flavor that goes well with other foods.
But first you have to get past their dirty faces. Many dried mushrooms, especially the spongy-looking morels, have minute bits of dirt in their cracks and crevices. To clean them, soak in warm water for 10 minutes and, if needed, use a paintbrush to clean grit out of the holes. Discard the first soaking water.
