Winter pesto is an easy way to put some summer fun into ordinary weeknight meals. Take a few year-round ingredients, throw them in the food processor, and you've got enough pesto for more Desperation Dinners.
Today's focus is on making Spinach Parsley Pesto and stirring some into pasta for a fast side dish to serve with a store-bought roasted chicken. Freeze the leftover pesto to use later. (Stay tuned to this column over the next two weeks for more recipes that use pesto.)
