DEAR HELOISE: I had a recipe the other day that required light brown sugar, and all I had was dark. So I used it, and the recipe seemed the same to me. What is the difference between light and dark? -- Jackie from Tennessee, via e-mail DEAR JACKIE: The only difference between light and brown sugar is the amount of molasses that has been added. So, dark brown sugar has a higher molasses content. They can be substituted for each other, but remember that the darker sugar will add a richer molasses flavor.
