Q: I occasionally see recipes that call for both baking powder and baking soda. Is there any reason these two ingredients shouldn't be used together?

A: No. In fact, baking powder is a mixture of baking soda and acid, such as the sodium aluminum sulfate and calcium phosphate in double-acting baking powder. Baking soda must be combined with an acid and a liquid to produce carbon dioxide, the gas that makes baked goods rise. That's why many recipes developed before the introduction of baking powder contained buttermilk or sour milk.
