With a flavor that can support almost any other ingredient and a texture of velvet, mascarpone cheese is becoming as necessary as butter in the contemporary chef's kitchen.
Often referred to as "Italian cream cheese," mascarpone is the key ingredient in the popular Italian dessert tiramisu, but it has many other uses, say chefs.
