Sorry, Charlie. There was a time when fish, to most Americans, meant canned tuna. But no more.
These days, the neighborhood fish market not only carries fresh tuna, but also offers a selection of such relatively exotic species as St. Peter's fish from Israel; mahi-mahi, wahoo and other less familiar fish from Hawaii; blowfish from the Carolinas; and, of course, both Alaskan and Norwegian salmon. All fresh.
In simplest terms, Americans are eating more fish and shellfish than ever before.
Per-capita consumption went up 18 percent from 1964 to 1982, then went up another 18 percent by 1985. The 1986 ...
