Next time you spread some cheese on a cracker, consider this: It takes about 10 pounds of milk to make a single pound of cheese. That tiny piece of cheese is a concentrated source of nutrients including protein, calcium, phosphorus, zinc, vitamin A, riboflavin, and vitamin B12. It's such a good source of calcium that cheese now provides about 25 percent of the calcium in Americans' diets. The average consumption per person is about 31 pounds of cheese per year--triple the amount of 30 years ago. But our love affair with cheese has a price.
