Bel Paese - This is the revered champagne of Italian cheese. The color is ivory and the taste one of buttery elegance. A milder version of Bel Paese is made in the United States and bears Western Hemisphere maps on the wrapper. A third Bel Paese is a creamy processed cheese, Medallion.
Fontina - This buttery, lovely Gruyere-type cheese hails from the western Italian Alps. Only Fontina D'Aosta is the real thing, but widespread imitations are imported here.
