Appetizers and side dishes play an important role in attracting and keeping customers in food-service operations across the country. It would be a rather sorry cocktail hour, after all, without a few nibbles. And it's hard to imagine a burger without fries.
The second half of 2005 saw emerging chains adding specialty salads, according to the latest "Trend Tracker" report from Chicago-based Technomic Inc., while independents focused on appetizers with seafood ingredients. For the top 200 chains, the emphasis was on new salads and spicier finger foods.
