Draft beer is great stuff for the operator: central storage with distributed dispense, great profit margin, the freshest beer you can get. Bottom line: cold draft is the hot ticket to cool profits. But, let's face it, there can be problems. Maybe the cold box is used for everything, so the beer tastes like onions and raw meat. And maybe the kitchen staff is in and out of the box all the time, so the beer gets warm.
