It used to be easy to write a wine list. Back in the day (you kids weren't born yet), you'd start with a few well-known Champagnes, sprinkle liberally with California, fold in a number of well-known French and Italian wines, season with selections from South America, New Zealand and Australia and voila! You'd have a wine list.
But let's say you wanted to win a big wine list award. Then, you'd start with half a million dollars, buy everything that garners more than 93 points, amass at least 1,500 choices and soon you could proudly sport a silver plaque at your front entrance. Sadly, you'd also soon be closing your doors, since you would have gone bankrupt.
