Feb. 12--Ester Tobin makes one hot enchilada sauce. Her sauce is so popular that it has been used in an enchilada fundraiser for 23 years. What started out as a recipe for four enchiladas has transformed into one for 2,700 enchiladas that are served at the annual Pre-Charro Days Mini-Fiesta at St. Joseph's Church. "I've been doing (making) it for a long time," said Tobin, publicity chairwoman for the Brownsville Court of the Catholic Daughters of America.
