Rhubarb bread and butter pudding SERVES 6-8 rhubarb 450g sugar for sprinkling butter 55g unsalted plus extra white bread 12 slices good-quality FOR THE CUSTARD eggs 4 large free-range organic cream 450ml milk 230ml vanilla extract 1 tsp sugar 175g TO SERVE cream lightly whipped OYou will need a 20cm x 20cm ovenproof baking dish and a shallow roasting pan (or bain-marie).
