Wegmans has carved out a reputation as one of the U.S.' most innovative operators of supermarket delis. The Rochester, N.Y.-based retailer's eclectic mix of gourmet-quality prepared foods are merchandised via a wide array of vehicles including full-service hot and cold food stations, self-service buffets and grab-and-go displays.
Yet, the privately held operator of more than 70 locations still is stretching the boundaries of what has traditionally defined the deli.
