IT's two days before Christmas, and the excitement is bubbling in a small office overlooking the bustling town of Coxen Hole on Roatan island, Honduras. Children scramble and play underfoot, while volunteers at Familias Saludables (Healthy Families) struggle good humouredly to preserve some order.
