Q I love to make things with pastry, but I'm always afraid I'll have a disaster. What can I do?
A One of the wonderful conveniences in the grocery store is frozen puff pastry. I use Pepperidge Farm puff pastry, which is available everywhere. Defrost it overnight in the refrigerator and roll it out very cold. I make all kinds of savory tarts with it--like these tomato and goat cheese tarts--for the simplest, most elegant lunch in the world.

3 tablespoons good olive oil,
