Long a staple in meat cases, chubs might best be described as "the other ground beef."
Unlike most proteins that are marketed in clear film to enable shoppers to view product quality, chubs typically are sold in colored packages--putting the items at a merchandising disadvantage.
Yet, demand for chubs remains steady. There were 176.2 million pounds of ground beef chubs sold at retail outlets in 2006, accounting for 4.1 percent of total beef sales, according to Hoffman Estates, Ill.-based FreshLook Marketing Group. Deliveries were up slightly from 2005 when there were 169.7 million pounds sold, representing 4 percent of beef sales.
