Scientists in New Zealand have identified cows with a natural ability to produce skimmed milk and say that their genes could be used to breed herds of animals producing only skimmed milk. They have also identified a single cow capable of producing milk with the unique characteristics required to make a butter that is spreadable straight from the fridge. This cow, Marge, produces milk that is very low in saturated fats, said the scientists who discovered her, and so should be high in polyunsaturates and monounsaturated fats.
