Jun. 20--Call me a snob, but I will not use pectin in my preserves. And yes, I can tell if you have.
Even if you follow Sure-Jell's instructions, it's just too easy to get a rubbery result. And there's the principle of the thing. Sure-Jell's motto is "All of the love, none of the labor." To me, the labor is the point. If I wanted the labor to be easy, I'd just buy strawberry preserves.
My annotated recipe for strawberry preserves in Nora Carey's "Perfect Preserves: Provisions from the Kitchen Garden" says that I've been making this recipe since 1990. My husband loves this so much that he has been seen eating it ...
