Vitamins A, C and E are essential ingredients of a healthy diet. These important phytochemicals function as antioxidants, reducing oxidative stress in the body by neutralising free radicals. Fresh fruits and vegetables are a major source of these antioxidant vitamins, but many other processed and/or packaged foods are easily supplemented with them, creating a variety of functional foods that are in demand by increasingly health-conscious consumers.
