Kathy Westbrook is typically at the State Fair 12 hours a day, preparing breakfast, lunch and dinner. While she undoubtedly serves fewer meals than any food vendor on the fairgrounds, they are arguably the most important meals. Westbrook is the backstage caterer at the grandstand, responsible for whatever B.B. King, Fergie and Kellie (no calamari) Pickler - and their crews - want to eat. "Every single day the menu is chosen by the headliner," says Westbrook, who will work her eighth fair this year. There are always special needs. Last year, Steve Miller requested tofu steaks. Alan Jackson wanted salads with only iceberg lettuce. ...
