When Achatz Handmade Pie Co. starts baking pies this week in its new Chesterfield Township facility, it opens a new chapter for the company.
But with the move from a pole barn into a 19,000-square-foot bakery, the company faces the challenge of how to keep the personal touch that's made it successful when it's producing 15,000 pies a week.
"We're still going to be a handmade pie company, not a machine-made pie company,'' co-owner Wendy Achatz said. "And just because we're moving to a bigger facility doesn't mean that I'm going to start putting potassium sorbate into the pies.''
