Sep. 19--I cannot think of a piece of kitchen equipment that is more timeless than the cast-iron skillet. If you happened to inherit one of these well-seasoned black beauties, count yourself fortunate. It may be thought of as a thing of the past, but the truth is the skillet has been ahead of its time for hundreds of years if you count all those ancient pots and pans made by pouring molten iron into sand to make a variety of multi-purpose vessels as far back as 1100. Cast-iron pans provide even heat to foods and when well-seasoned, they are nonstick.
