ACTING on the advice of health professionals and actually following the lead of some restaurants, the New York City Board of Health last week banned restaurants across the city from baking and frying food in trans fats, effective in July next year, and from serving outside-purchased food containing trans fats in July 2008.

The action applies to all restaurants, from burger restaurants and pizzerias to white-tablecloth establishments, and makes the city the first U.S. municipality to ban trans fats.
