LA VALLE, Wis.--May 21--Sid Cook is fed up. A Wisconsin cheese maker for 25 years, Cook says he's never seen state regulation on the cheese industry so onerous, so costly or so bad for business.
From new requirements on certification on pasteurizer operators to rising licensing and inspection fees, Cook says Wisconsin's efforts to protect consumers are exceeding the industry's ability to bear the costs.
What's more, Cook says, growing regulatory expenses come as Wisconsin cheese makers are struggling to survive competition that is flourishing outside of the Upper Midwest because of cheaper milk prices in other regions.
