Home baking declines, but baking ingredient introductions increase 41% in 1994.

Only 20% of adults baked at least once in 1994, down from 22% in 1985, according to Mediamark Research Inc. of New York, N.Y. Package Facts, also in New York City, reported that retail sales of Home Baking Products grew a skinny 0.3% in 1993 and were projected to grow a slim 0.9% in 1994.

In spite of the decline in home baking, ingredient manufacturers are betting on hotter ovens in 1995. In 1994, New Product News reported the introduction of 544 new baking ingredient items, a hefty 42% increase over 1993's total of 383.
