I must recognize that nine out of every ten wines I taste are red. I'm a red wine person and my culinary taste is in accord to that. However, I must also recognize that some of my most pleasantly shocking memories of a great wine are of a white wine, in particular white burgundy. Whomever has tasted a Puligny Montrachet, a Mersault or a Chablis, will agree that we're talking here about the most elegant and refined expression of Chardonnay and perhaps the most elegant wines in the world; fruity, lemony, herbal and crisp, they're simply out of this world.
