Meringue, that wonderful combination of whipped egg whites and sugar, is a French original. It's that characteristic crisp outside and squishy inside combined with lashings of fresh cream that make it one of the most requested items on restaurant dessert menus.
It's a curious thing, though: many are daunted about making their own meringues even though they are made from two simple ingredients. So depending how you like your meringue - soft and marshmallowy, like a pavlova, or crunchy and dry inside for smearing with cream - follow our pointers and you won't go wrong.

6 extra large egg whites
5ml vinegar
