Volume isn't what is used to be, not by a long shot. But for many milk processors, especially those not making yogurt, cottage cheese remains their most important cultured product. And now, after 20 years of steady decline, the industry has a plan that, if supported by processors, could have a huge impact on the category's future.
Cottage cheese, unlike the thriving sour cream and yogurt categories, needs plenty of help. Total industry volume was about 720 million lb in 1994, down 35% from 1.1 billion lb in 1972.
