Oct. 7--What started in 1907 with one man's desire to start a small meat market in downtown Knoxville has since come full circle after decades of tremendous growth and then the sale of the family's centerpiece packing operation.
As Lay's Market celebrates its centennial this year, fourth-generation members of the family known for butchering and selling beef and pork are eyeing opportunities for future growth in a city that has changed as much as the business itself.
