Oct. 10--A vegetarian dinner at Yoshimatsu Healthy Japanese Eatery is a study in understatement. The restaurant focuses on nutritious and light cuisine full of fresh ingredients. The food doesn't hit you over the head but instead requires diners to appreciate the natural flavor of vegetables, the soft slipperiness of fat udon noodles and the toasty crispness of a fried eggroll wrapper. Yoshimatsu diners order at the cash register and a server brings the food to the booth or table. A companion bistro, SushiMatsu, is under the same roof and offers a full-service sushi restaurant.
