Legions of golden doughnuts advance toward the two women at the end of the conveyor belt. They snatch the hot rings of fried dough off the line and tumble them in a bowl filled with cinnamon and sugar.

The bakery at Bowman Orchards smells of fall, warm cinnamon blended with the perfume of sweet apples.

Hermaine Chotaowski and Valerie Vassell arrange the cider doughnuts on wide trays after a sugar-and-cinnamon dusting and tossing those that fail to meet their standards - perfectly plump rings of dough that are slightly crisp but not tough - into a reject bin.
