For many, the cheese business is still a commodity market, but specialty cheesemakers are enjoying something of a renaissance.

No one has ever been able to quantify "specialty" cheese, but one indicator that the specialty cheese market is expanding is the number of additional entries in the biennial U.S. Championship Cheese Contest. This year, entries were up nearly one-third from the 1993 contest. Most of the increase was in the Open Classes - typically specialty-type cheeses and the new demonstration category, Retail Packaged Cheese.
