Eight healthy volunteers ingested, on three different days separated by at least a week, 300 or 1,200 galactosidic units of the enzyme alpha-galactosidase or placebo, along with 420 g of cooked beans. As compared with placebo, the higher dose (but not the lower dose) of alpha-galactosidase significantly reduced breath hydrogen excretion, indicating an improvement in carbohydrate absorption and a reduction in gas production. The higher dose significantly decreased, and the lower dose nonsignificantly decreased, the number of flatus episodes.
