After experiencing rush hour in Tokyo station - where subway, rail and bullet trains meet taxis and buses - I understand Japanese enthusiasm for functional foods and drinks. Long commutes - sometimes 2 to 3 hours - in thick air and crowded common areas invite allergies, infections, fatigue and stress. To prevent or reduce such negative health factors, the Japanese supplement their already low saturated-fat diet with food and drink containing "functional" ingredients.
